Cara cara orange, lemongrass and honey tea mix
ingredients
9 Sunkist Cara cara oranges
3 cups caster or superfine sugar
3 cups honey
12 stalks lemongrass, chopped
Directons
1. Thinly slice the Cara Cara oranges and remove seeds. Discard the membrane and as much white pith as possible. Reserve the juice.

2. In a medium bowl, add the sliced oranges and sugar. Gently stir. Set aside for 2 hrs.
3. After 2 hrs, add the lemongrass and honey. Transfer mixture to a glass jar with an airtight lid.
4. Store the covered mixture in the refrigerator for at least 4 days (and up to 2 weeks) before using. The flavour will improve over time.
5. When ready to drink, add 1- 2 heaped spoonfuls of the honey tea mixture into a mug. Top with boiling water. Add ice to enjoy it cold if preferred.
